Happy Easter to All!
I woke up this morning to a snowy KC. I can honestly say I do not remember the last time I woke up to snow on Easter morning. It’s pretty and all, but I’m really starting to feel like KC did not get the memo that it is officially spring.
Once again the Firefighter and I are off to a holiday feast and were asked to bring a favorite dish. Even though we made cheese grits for Thanksgiving, I made a half-batch for Easter for the Firefighter to enjoy.
For my favorite dish, I whipped together a batch of one of my favorite ‘salads’. I use the term ‘salad’ loosely, since this dish is more along the lines of jello-salad as opposed to one with lettuce. But if it’s called a ‘salad’, it’s still good for you, right?

I’ve been awake since about 2:30 this morning. I’m not too sure what happened, I was completely sleep and then *BAM* I was wide awake. I tossed and turned, nodding off for 15-20 minute time periods here and there, but otherwise all sleeping efforts were in vain.

Hey, Kansas City, remember how yesterday was a toasty-warm 79 degrees outside? And then today as I left my apartment for the drive to work, there was a little bit of sleet coming down? And by the time I got to work there were big, fat snowflakes swirling around outside?
Yeah. That’s cool.
I do remember these weather swings from when I lived in the Midwest growing up, but – seriously – it’s not as fun when you’re an adult. The slight perk? Still have the opportunity to get some use out of comfy/cozy/cute winter clothes and boots.
But really…when is the warm weather going to get here and stay?
I can’t believe that it’s already March, but I am incredibly glad that it is. February was an insane month for me at work, but the light is finally at the end of the tunnel.
There have been some crazy up and down moments between event planning for work and event planning for my wedding in less than four months (holy crap). When I haven’t been at work, I’ve been eating/falling asleep/asleep. I can’t wait to get through this week so that I can recharge my planning batteries for a little bit.
And in the spirit of the end being near, here’s a little motivation to kick off the week (a little late).
