As is somewhat typical when you are married to someone who has a non-traditional schedule, the Firefighter and I are spending the holiday apart. His schedule does take some getting used to, but we’ve gotten pretty good at celebrating our holidays when we can – so we spent this past Sunday celebrating Thanksgiving together.
Since it was just the two of us, we didn’t do a full blown Thanksgiving meal and just stuck with preparing the usual staples. Everything we had was easy to put together and prepare, so that the whole cooking process took just about an hour from start time to digging in. I almost felt it was a bit like ‘cheating’ using instant mashed potatoes and stuffing, but I spiced them both up a bit.
Our dinner consisted of: turkey tenderloin, instant mashed potatoes with some cream cheese and plain Greek yogurt (my go-to substitute for sour cream) added in, stuffing (or I guess dressing since it wasn’t in the bird?), cranberry sauce, and green bean casserole. A bit of a smaller Thanksgiving meal, but just as delicious.
Today I am celebrating Thanksgiving with family in Florida before taking off to celebrate a friend’s bachelorette weekend. This Thanksgiving I am thankful for the Firefighter, both of our families, friends, having a job, and wearing shorts in November :).
