Whole30 Journey: Days 14-20

Day 14: Back to Sleepy Reality

Breakfast: Apple Pie Larabar
Lunch: Ground beef-and-turkey meatballs; fruit salad
Dinner: Baked apple and banana with cinnamon and almond butter

The weekend definitely caught up with me this day. Even though I went to bed pretty early the night before, I was still pretty exhausted. By the time work was over and the groceries picked up from the store, I really had no motivation left to do anything at all. Even so, I forced myself to chop potatoes and fruit for this weeks fruit salad. After getting lunch together for the next day, I went to bed and was out by 8:45 PM.

Day 15: Halfway There!

Breakfast: Cashew Cookie Larabar; Almonds
Lunch: Salad with shredded chicken, mini bell peppers, guacamole and salsa; fruit salad
Dinner: Crockpot balsamic roast beef with red potatoes and carrots

I woke up feeling pretty amazing, mostly due to the fact that I got about 9 hours of sleep. Works felt like it went on for a little long, but that was because I was making up hours from being out of the office the week before. You gotta do what you gotta do to make that money!

Since I didn’t have the weekend to do any food prep whatsoever, I stuck with crock pot meals this week. Since the roast was such a winner during my first week, I threw it together again before heading to work. When I got home, it was perfectly done and delicious.

Day 16: All the Excitement

Breakfast: Apple Pie Larabar; Almonds
Lunch: Leftover crockpot balsamic roast beef with red potatoes and carrots; fruit salad
Dinner: Leftover crockpot balsamic roast beef with red potatoes and carrots

Even though the days meals look pretty boring when written in black and white, I don’t think I can ever get tired of a meat-and-potato meal.

On a non-Whole30 or meal related note, the Firefighter and I are officially on the look for our first house! Since I moved around a bunch growing up, so this isn’t my first house hunt rodeo, but it’s different as an adult (obviously). It’s an exciting but nervous time!

Day 17: Drained

Breakfast: Coconut-and-apple Kind Bar; Almonds
Lunch: Leftover crockpot balsamic roast beef with red potatoes and carrots; fruit salad
Dinner: Leftover crockpot balsamic roast beef with red potatoes and carrots
Snack: Baked apple and banana with cinnamon and almond butter

By the time Thursday came around, it felt a bit like the week was never going to end. It was exhausting and both mentally and emotionally draining. On top of that little bit of crazy, the Firefighter and I learned that his family dog was put down earlier that day. Although the pup is now in a better place, it was a little heartbreaking and all the harder to get the news at work, where I was trying to keep it together. It was a tough day, but I got through it.

Day 18: Celebrate Good Times

Breakfast: Cashew Cookie Larabar; Almonds
Lunch: Fruit salad; carrots and guacamole
Dinner: Steak; grilled vegetables; baked potato
Snack: Cashew Cookie Larabar; almonds

I woke up on Friday in a much better mood and feeling much more positive in general. I think I was finally catching up on sleep, plus I was excited that it was Friday. The Firefighter and I also had plans to meet up with friends that night to celebrate his and another friend of ours birthday.

I will say that I got a little bit frustrated at dinner when the questions came up at dinner about why I wasn’t drinking or eating onion rings/non-compliant food. The frustration more stemmed from the fact that I kept saying that the Whole30 was not a diet, but I wasn’t feeling terribly supported. I brushed it off and thankfully the conversations moved on and everyone went back to ignoring the fact I stuck with unsweetened iced tea.

Day 19: Sleepy Saturday

Breakfast: Cashew Cookie Larabar; Baked apple and banana with cinnamon and almond butter
Lunch: Leftover steak; grilled vegetables; baked potato
Dinner: Vegetable ‘scramble’ with sauteed zucchini, eggs/egg whites with guacamole and salsa

Since I was out late last night and then up way earlier than I would have liked because of the Firefighter’s alarm going off, it was a bit of a lazier day than I originally envisioned for myself. That being said, I know it’s important to listen to your body and give it rest when it needs it. I’m sure part of this is still being busy and on the go last weekend with the wedding and Florida birthday celebrations. While I was decently productive, most of the productivity took place either on the couch or in the comfort of my “cloud” (my bed). I did manage to get a little bit of housekeeping done and the apartment in much better order than it has been since the holidays.

Day 20: So Close

Breakfast: Baked apple and banana with cinnamon and almond butter
Lunch: Two baked egg ‘muffins’; fruit salad
Dinner: Steak, sautéed green beans, and baked potato with salt and pepper

Sunday was another somewhat uneventful day. I got things done, but not as much cleaning as I originally wanted. All the laundry got done, though, so I’ll take that as a win (there was a ton of it).

We met up with friends again for dinner that night. I never thought I’d find myself saying this, but I’m getting kind of tired of steak, steamed/sautéed veggies and baked potatoes for dinner. I’ve been sticking with that meal since it’s typically (to me) the easiest to make sure that there is no dairy/non-compliant ingredients involved, but maybe next time I’ll try just a burger patty with sautéed onions and avocado or something.

I have gotten to the point where I feel like I’m eating kind of the same thing all the time, but with such little time left I’m powering through. The end is near(ish!)
